Corzetti pasta with oranges, anchovies and walnuts

In this festive pasta recipe, we paired briny anchovies with juicy oranges. The result is a tasty corzetti dish the whole family will enjoy. Easy to make, this corzetti pasta with oranges, anchovies and walnuts is perfect both for Christmas Eve and the Feast of the Seven Fishes.

Ingredients (serves 4):

2 organic oranges

10 oil-packed anchovy fillets

walnuts

extra virgin olive oil

chilled infused oil

In a frying pan over low heat, heat some extra virgin olive oil and add the anchovies. Cook until the anchovy fillets dissolve. Now add the oranges (skin removed and cubed into bite-size pieces) and simmer for a couple of minutes. The oranges should be soft but not mushy.

Toss the cooked corzetti pasta in the sauce (to make corzetti you can follow this recipe). Add the walnuts and drizzle with some chilled infused oil. Serve immediately.
