Rocket pesto is a great alternative to traditional basil pesto. Peppery and fresh, this vegetarian pasta sauce pairs beautifully with corzetti pasta. It’s quick and easy to make.
Corzetti Pasta with Rocket Pesto
2 bunch rocket
10 basil leaves
1/2 cup grated parmesan cheese
1 garlic clove
walnuts (can be replaced with pine nuts)
extra virgin olive oil
salt and black pepper
To make the pesto, place the rocket, basil, parmesan cheese, garlic and walnuts in a food processor and process until finely chopped. Add enough extra virgin olive oil so that the sauce turns creamy and smooth. Season with salt and pepper.
Cook the corzetti pasta until al dente, drain and add the pasta to the rocket pesto. Toss to combine and serve immediately.
