This unusual pasta dish makes an elegant and memorable dinner for any special occasion. It is rich tasting and quick to prepare. Although you can also use the creamy gorgonzola dolce, we recommend choosing the sharper aged version, whose spicy, tangy flavor pairs beautifully with dark chocolate.
Corzetti pasta with blue cheese and dark chocolate
Ingredients (serves 4):
For the sauce:
250 gr Italian blue cheese (gorgonzola)
20 gr dark chocolate
extra virgin olive oil
salt
Prepare the dough for the corzetti, following this recipe.
In a bowl, crumble the blue cheese and set aside.
Cook the pasta al dente, then drain it and add it to the bowl with the gorgonzola. Drizzle with some extra virgin olive oil and toss until the sauce coats the corzetti pasta well.
Adjust the seasoning and divide into serving plates. Grate chocolate on top and serve.
