Corzetti Pasta with Lemongrass Pesto
10 lemongrass stalks
1 garlic clove
50 gr almonds
50 gr parmigiano reggiano cheese
Extra virgin olive oil
Salt and pepper
Lemon zest, to garnish
In a food processor, blend the lemongrass, garlic clove, almonds and parmigiano reggiano cheese with extra virgin olive oil. Process until forming a smooth pesto. If needed, add some tablespoons of water. Season with salt and pepper according to your preferences.
Prepare corzetti pasta and cook until al dente. Drain and toss with the lemongrass pesto. Serve with some grated parmigiano reggiano and top with lemon zest, for an extra lemony bite.
