This corzetti pasta with sun-dried tomatoes is the true essence of Italian summer. You can use home-made pomodori secchi or a good quality brand found at your local supermarket, either way this recipe will be big on flavor and texture.
Corzetti Pasta with Sun-dried Tomatoes
- 15 sun-dried tomatoes
- 250 gr tomato sauce
- extra virgin olive oil
- 1 garlic clove
- fresh basil
- Parmigiano Reggiano cheese
- salt and pepper
Cut ten sun-dried tomatoes into strips. Cover the bottom of a pan with extra virgin olive oil, add the chopped garlic clove, sun-dried tomatoes (both the strips and the whole ones) and stir frequently. Now add the tomato sauce and the fresh basil. Season with salt and pepper and keep cooking until the tomato sauce has thickened a little.
In the meantime, prepare the fresh corzetti pasta and cook in boiling salted water until al dente. Drain and toss with the sun-dried tomatoes sauce. Serve immediately with some freshly grated Parmigiano Reggiano cheese.
