Corzetti Pasta with Lemongrass Pesto

Healthy yet packed with flavor, our corzetti pasta with lemongrass pesto is a soul-satisfying primo piatto celebrating the lemony nuance of this fragrant herb (sometimes called citronella). A freshly aromatic pasta sauce, lemongrass pesto will give your corzetti pasta a subtle richness as well as a healthy shock of nutrients.

Corzetti Pasta with Lemongrass Pesto

Ingredients:

10 lemongrass stalks
1 garlic clove
50 gr almonds
50 gr parmigiano reggiano cheese
Extra virgin olive oil
Salt and pepper
Lemon zest, to garnish

In a food processor, blend the lemongrass, garlic clove, almonds and parmigiano reggiano cheese with extra virgin olive oil. Process until forming a smooth pesto. If needed, add some tablespoons of water. Season with salt and pepper according to your preferences.

Prepare corzetti pasta and cook until al dente. Drain and toss with the lemongrass pesto. Serve with some grated parmigiano reggiano and top with lemon zest, for an extra lemony bite.

ABOUT CORZETTI STAMPS

A corzetti stamp is a two-piece pasta tool: one piece is a pasta cutter, the other is an engraved stamp with a design that embosses itself on the pasta. Our corzetti stamps are handmade in our Tuscany-based workshop using quality woods and no paint or lacquer.
