Corzetti Pasta Salad with Fava Beans, Tomatoes and Strawberry

This pasta salad with fava beans, tomatoes and strawberry is a big hit every time we make it. It combines the distinct taste of fava beans, which is slightly bitter and earthy, with ripe tomatoes and strawberries. A perfect picnic dish.

 

Corzetti Pasta Salad with Fava Beans, Tomatoes and Strawberries

Ingredients (serves 4):

300 gr fresh fava beans, shelled

200 gr tomatoes, cubed

100 gr strawberries, cut into thin slices

fresh basil leaves

salt and pepper

extra virgin olive oil

In a bowl, place the shelled fava beans, the cubed tomatoes and the sliced strawberries. Add 2 tablespoons of extra-virgin olive oil, season with salt and pepper and set aside.

Prepare the corzetti pasta using this recipe. Cook the pasta until al dente, then drain it and add it to the fava bean/tomato/strawberry bowl.

Toss the pasta in the sauce and add fresh basil leaves.

Eat your corzetti pasta salad with fava beans, tomatoes and strawberries al fresco, preferably in a garden or by the beach.

ABOUT CORZETTI STAMPS

A corzetti stamp is a two-piece pasta tool: one piece is a pasta cutter, the other is an engraved stamp with a design that embosses itself on the pasta. Our corzetti stamps are handmade in our Tuscany-based workshop using quality woods and no paint or lacquer.
